Diamondback Grill’s dinner menu and specials offer an excellent
variety of American regional cuisine at affordable prices, and our
wine list is developed to complement that same philosophy. Our
primarily American wine selection is enjoyed in the superior value
of a 7 1/2 - ounce pour. Regardless of how fancy the stemware,
the 5-ounce glass of wine poured by so many restaurants does not
offer the value or satisfaction Diamondback delivers.

Our philosophy of focusing on wine variety in addition to wine
value is embodied in our by-the-glass program featuring 35
selections, allowing customers to choose different wines with each
course of their meal. This encourages experimentation, education
and satisfaction. Please note our recommended wine pairing with
each dinner menu selection. Ultimately you are the judge, and we
firmly believe that if it doesn’t taste good to you, it’s not a good
wine.

"In 1985 while I was at work cataloging wine for Christies of
London for their annual summer wine auction in Chicago,
the neck of a bottle of 1898 Lafite Rothschild cracked and
imploded into the bottle. My colleague and I strained the
wine through our t-shirts into a plastic cup and drank it with
Domino’s pizza -- probably the best meal of my life!"
